The weight accuracy can be calculated with the Relative standard deviation.
First, we need to calculate the standard deviation that provides a numerical indication of how close or far away the data is from the average. Assume to obtain N measures of the same size x. With these measures we then calculate the average. The average should show what is, roughly, the value we can expect by choosing a random data; in probability, it is called expected value. This is not necessarily true though, because after calculating the average, the data values can be very far from it.

In the packaging world and in particular with regards to dose accuracy, the population will be the set of measured weights
From the standard deviation you can also calculate the relative standard deviation as the ratio of to the arithmetic mean of the values.

The relative standard deviation is the final formula used to calculate the weight accuracy of the bags.
